Always wanted to create my own starter but working from home provided the flexibility and impetus to get going.

Characteristics

Silky smooth and very active. Yields excellent bread typical of a traditional Maltese "hobża". Triples in size overnight after feeding. Keeps very well in the fridge between bakes.

Starting ingredients

  • 25% Plain flour
  • 25% Rye flour
  • 50% Water

Feeding ingredients

  • 25% Rye flour
  • 25% Plain flour
  • 50% Water

Add 50g each of rye and plain flour. Add 100g of water and mix well.
