I find using sourdough starter very creative. It's an alive ingredient which is sensitive and very reactive to the environmental conditions, even to my mood - based on how much I'm willing each time to knead my bread. Spending so much time and focus on a recipe is a form of meditation!

It's a robust starter, usually full of airy bubbles! While kept in the fridge he keeps his slow growth. Manitoba flour keeps him most healthy.
