My mother made sourdough baked goods and pancakes when I was a child, so as an adult I decided to make my own starters.

Bob received his name because a friend of mine said he looked like "Sponge Bob" when fully active. Bob tends to be quite active and quickly develops his spongy texture.

Always a great option for using up excess starter instead of discarding it.
Corn Bread
I use Bob and Peruvian purple corn which I grind to make cornmeal. Bob doesn't mind fermenting the corn meal.
