Characteristics
Fast growing resilient starter. Has had periods of 1 month sleeping in fridge. Strong rise straight from the fridge although mostly fed prior to use. It’s lived most of its life as a 100% hydration. It’s in transition now to a stiffer 50% hydration. Fed mostly 1\3 rye, 1\3 whole meal and 1\3 white flour.
