I've started baking sourdough 5 years ago just to add flavour to my breads and because of all the great bread bakers I have been following on The fresh loaf website.

Use in daily baking 3/4 of the starter. Add flour and water - no weighing of ingredients - just doing it by eye.

18 months old starter called "Pet". I've started it at the same time I've started my bakery in West London UK, called: October 26 - Artisan Bread and Pastry.
