I had done it many years ago with little success. Then when I watched the series Cooked by Michael Pollan, I got motivated again
Caractéristiques
It has a great balance of acetic and lactic acid flavors. It rises exceptionally well and have to use small inoculation amounts to keep it from rising too fast.

I generally store my starter in the fridge, but will take it out the day before I bake to start building levain

I love baking a basic loaf of bread. I don't do a lot of variations on that. I also like tortillas and crackers.
