I keep Gary both liquid form in the refrigerator. Before I bake with him I refresh once at 1:1:1 straight from fridge. I use only hi-gluten flour. I bake with a leaven build that is 1:1 with a 20% inoculation.

House Sourdough

15% kamut and 5% spelt Old Guilford Mill & hi-gluten from Lindley Mills at 14% protein. 3% germ & 2% salt. 78% water
