I took a class about sourdough bread and I felt in love!
Caratteristiche
He's super strong and only likes spelt flour. Usually he's ready to go in 12 hours and when he hits the dough i need to stop him, 'cause he's super hungry and makes it double in a couple of hours so I have to quickly put my dough in the fridge, to slow him down!

I discard a spoon of starter (that I usually use for pancakes) and feed it with water and flour.
Usually is 4 tbsp of water and 2 heaped tbsp of flour.
