- 25g White flour
- 25g Rye flour
- 50g Water
- 5g Ice cube

Add 50gm of mix white & Rye flour on 50gm of water, because I live in a hot weather country so I put my jar in a stainless bowel filled with ice and I keep measuring the temperature every couple of hours to make sure that I have a good temperature for fermentation (16-23°C)
