- 100% Filtered water

After I use about 2 tbsp of starter from my fridge to activate the starter, I pour about 40g of water in the glass bottle my starter is kept in in fridge, and wash of the sides to dissolve leftover starter. Then I put in 40g of flour and whisk till incorporated. Then i leave it on the counter for 8- 12 hours before I return it to the fridge.
