Niles Sourdough
Since 2004
Started work in 1983 at a bakery in CT, and used their starter for bread. Took some with me used used it for 15 year. Moved to California and made a new starter that we've used ever since.
Characteristics
It's generally bubbly and happy, only slightly sour. If it sits for a week in the fridge without being fed, it can form a grey sludge on top, which we just discard and feed up the starter well for a few days.

Working method

Starter was made in 2003, with organic grapes from our backyard, organic white flour and water. For the last six years, it's lived at our cooperative bakery, Niles Pie Company, and is fed with unbleached all purpose flour daily. We use it in bread and our croissant doughs.
