Starting ingredients
- 70% Coconut water
- 100% White flour
Feeding ingredients

Take out 150g discard
Add in 70g drink water
Mix it up
Add in 100g flour
Working method

Starter with 70% of hydration.
I use white flour with coconut water.
My sourdough is almost 2 years old, named Coco (coconut in short). It delivers breads with light sourness and creamy note.
