I live in Nederlands en there is no more artisan bread in the ordinary bakery. I missed the real bread which is made in Czech Republic. I have seen by my FBfriend selfmade sourdough bread and I decided to try it also.

My Julian is made with love. First I used rye sourdough and I was not patient to prove a wheat one, but now I falled in love with the stucture of the wheat dough without a bit of rye.

I take him out of the fridge. Than I add wheat flour and water to wake him up and make a starter for a new bread. When the rise is done, i'l take of a little bit en put it back in the fridge or start a nieuw starter immediately.
