  • 200g All purpose flour
  • 555g Water
  • 15g Salt
  • 15g Sugar
  • 320g Starter

After the starter matures, I separate out 180 grams to feed (with 180 grams of bread flour and 180 grams of water). The rest I use in my dough (320 grams).
