Day 1: mix flour, water, honey
Day 2: scale 200g of Sourdough + 200g Spelt flour + 200g water
Day 3: scale 200g of Sourdough + 200g of Spelt flour + 200g water
Day 4: scale 600g of Sourdough and add 200g of Spelt flour and 200g of water

4% Honey
100% Water
Metodo di lavorazione

200g spelt flour, 200g water, 8g honey
Mix all together in jar, cover with rag and leave in retarder on 25 celsius for 24 hours. Water temperature 25 celsius.
