It is very vigorous and happy. The starter has a nice aroma and breads made from it can be made to tast from mild to moderately sour.

- 1Cup Unbleached wheat flour
- .5Cup Water

Remove from ther refrigerator. Poor all of the starter into a large bowl. Clean crock if needed. Extract 1/2 cup of starter from bowl and return to crock. Feed each portion of the starter with one cup of your favourite flour and one cup of water. Mix each portion. Cover the bowl and replace the top on the crock. Proof starter. Return crock to fridge and use starter in bowl to bake.

It took two tries to get a successful starter going. It has been very robust for a couple of years now.
