My father who I saw very little of growing up made sourdough a lot. Although we don't speak much now I do think I originally started making sourdough to feel more connected to him. Now, it's evolved into something I do for myself. It's important to me.
Caratteristiche
My starter is super active. My loaves tend to really get nice oven spring, have a light and airy texture with a slightly sour flavor. It smells sour but not as strong as nail polish.

Take out the fridge to feed every two weeks

Take 50 Grams of starter and place in a clean container (weigh it)

Add 100 grams of 90 degrees F filtered water to bowl and stir to combine with starter

Add 100 grams generic all-purpose flour and mix

Let mixture sit on the counter for four hours and then either use it or put back into the fridge.
