keep refrigerated. at 35F for storage. Then remove half and place in stainless steel bowl and add 2cups flour and 1 1/2 cups water, then place in proofing box. Repeat throwing half out. doing this more frequently removes necessity of the repeat. Save half and put in back shelf of refrigerator.
