I started this one in charleston,south carolina. 50%eheat and 50% Rey.after one week, I feeded with wheat ap only, after 5 weeks, I dried it and took it to Germany.there it was needed with wheat so from the region black forest and spring water. Now it is a 2continents sourdough and it works very well.
