Put the 2 cups of milk in a glass jar or crock and cover with cheesecloth.

Leave in a warm place at room temperature for about 24 hours, or until it sours.

Let stand again at warm temperature until bubbly and sour. It will take from 2 to 5 days. The starter should have a good, yeasty, sour smell.

Replenish the starter after each use by stirring in equal amounts of milk and flour. Then store covered in the refrigerator.
