Organic Einkorn and Rye Starter 2022

I am trying to get close to the taste and texture of San Francisco Sourdough.
Caratteristiche
Day 1: mixed together 1/4 cup organic rye flour, 1/4 cup organic einkorn flour, 1 /2 cup bottled water. Day 2: a few bubbles, not much of a smell, I stirred only. Day 3: it slightly smelled like rubber, I discarded 1/2 cup and added .25 cup water and .25 cup Organic Einkorn flour. Day 4: Smells bad like dirty socks, I discarded most starter and will now feed 2x per day (every 12 hours).

First four days, feeding every 24 hours. Discarding 3/4 cup and adding 1/4 cup bottled water and 1/4 cup Organic Einkorn flour. The temperature in my kitchen ranges from 68 - 75 degrees Fahrenheit.

Room Temperature varies 68-75 degrees Fahrenheit. Southern California, 7 miles from the beach on a Plateau at 2,000 feet. I only use the Rye to start, I will only feed with Einkorn Flour going forward.
