if Iam storing my established starter on the counter I feed it daily a mixture of 80% King Arthur bread Flour, 20% King Arthur whole wheat, and filtered water, I feed a ratio of 1:2:2 discarding down to 20 grams each day. and storing the discard in the fridge, if not baking I store 20 grams in the fridge until ready to bake.

creating my starter, Days 1-9. Mix 50 grams bread flour with 50 grams water, after 24 hours, stir but do not feed, 24 hours later, discard to 20 grams, feed 40 grams flour and water, 24 hours, discard to 20grams, add 20 grams flour water, next 6 days do 1:1:1 feeding's.
