The smell is absolutely a key of my starter , sweet and not that sour ! The texture is airy and fluffy little bit wet ! The skin is mostly crispy !

In the winter feeding once in every 24 hours , I the summer morning and evening but then reduce the water to 60% . The starter that I use is claimed to be old over 100yeats . I personally use is since 2009.
