We grow Soft Red Winter Wheat on our farm. I recently acquired a Wonder Mill and am enjoying milling the grain that we have grown. I am fascinated with Sourdough and the process. Very new to this detailed process.

Terribly new beginner here! "Martha" is beginning to get a nice body and flavor. I asked her to be patient with me since I've been baking all my life, I'm new to this detailed sourdough process. Martha is beginning to mature into a starter with flavor and body.

I remove half the starter.
50% Starter

Add 1/4 cup whole wheat flour and 1/4 cup spring water to starter.
