It seemed like something fun and healthy to do. We vacation in Europe and other places with much better bread than I can find here, so I wanted to start making my own and see if I could make something better than what I can find locally.
Caractéristiques
I left it outside on a nice day when it was getting started. The lilacs in the yard were in bloom. It's nicely sour and with a hint of floral to it.

Remove 2/3 of the starter, add in equal amounts of flour (white, unbleached) and filtered water

pretty smooth - I'm using a 100% hydration, but it's dry in Colorado, so the dough isn't at all watery. It's been making good bread for a young starter
