Fell in love with the bread when visiting a cafe in San Fran. I had to make it. My starter is from a friend when I was living in Reno, it came from her families rural cafe in France. About 260 years old. It was a honor to have some of my friends starter 39 years ago. She's been so active and good to me in all those years. I can't imagine not having her. I do have some dried just in case.
Charakteristische Eigenschaften
She's so happy! Usually very active after 2 feeding when I've been out of town for a few weeks. She makes semi-sour breads. If I'm using 100% hydration. When I'm doing 90% hydration much sweeter then before. Much happier now that I've been feeding her 10-15% whole wheat, I like milling my own. Plus is so fresh. I've been doing it for a few years now. Give it a try. Elizabeth is very easy to care.
