I named this starter Samson after the Biblical character, because it is strong. I keep it well fed, therefore the yeasts have multiplied rapidly. It doubles easily within 3 hours of a feeding. I started it in a period of time when my husband was in intensive care after a horrible accident. I needed the therapeutic effect of kneading on a more frequent basis. It helped tremendously.
