Characteristics
Can be temperamental after long periods in the cold. When healthy, delivers a wonderful open crumb, fruity acidic aromas.

- 30g Rye meal
- 30g Rye flour
- 60g Filtered water

Working method

Discard excess starter

Add 50% rye meal 50% rye flour
30g Rye meal
30g Rye flour

Add 100% filtered water
60g Filtered water

Stir vigorously and leave for up to 12 hours (less than 5 when weather is > 35 degrees) into large bubbles visible. Remove portion for levain and leave mother in fridge.
