  • 1000g T65
  • 1000g Starter
  • 1000g T65
  • 1000g Water
  • 500g Starter
  • 500g Water
  • 500g T65

after a week Itake the juice from the cranberry's and mix them with the same amount of t65 flour

after 12 hours iI take 50% of the mix from step 1 and mix this with 100% water and 100% t65 and let it stay for 4 hours in de bakery

step 2 I repeat this one week long every 12 hours

my desem is made on the basis of 100% cranberry's i leave the cranberry's in a 40 degree water for a week in the bakery
